Ingredients

  • 6 cups shredded Hy-Vee romaine hearts
  • 2 cups shredded Instant Pot Chuck Roast
  • ½ cup red wine vinaigrette dressing, plus additional for serving
  • 1 cup halved cherry tomatoes
  • ½ cup thinly sliced red onion strips
  • ⅓ cup crumbled Cotija cheese

Preparation

Divide romaine among 4 serving bowls.

Toss chuck roast and ½ cup vinaigrette dressing in medium bowl to coat. Spoon beef mixture on top romaine.

Top with tomatoes, red onion and cheese. Serve with additional vinaigrette dressing, if desired.
