Brie Mummies

  • ½ (17.3-oz.) pkg. frozen puff pastry, thawed
  • 2 (8-oz.) Brie rounds
  • dried apricots, for garnish
  • dried cranberries, for garnish
  • crackers, for serving

Preheat oven to 375°. Line a baking sheet with parchment paper; spray with nonstick spray. Set aside.
Unfold 1 thawed sheet of frozen puff pastry onto a lightly floured surface. Cut crosswise into ½-inch strips. Place Brie rounds on prepared baking sheet; arrange pastry strips on top of each round. Bake 25 to 30 minutes or until pastry is lightly browned. Remove from oven.
Garnish with dried apricots and dried cranberries for eyes. Cool slightly before serving. Serve with additional dried fruit and crackers, if desired.
