  • 1 tbsp Hy-Vee whole berry cranberry sauce
  • 7 fresh mint leaves, plus additional for garnish
  • 1 ¼-inch thick lime slice, plus additional for garnish
  • 1 ¼-inch thick gingerroot slice
  • 2 oz coconut rum
  • 3 oz Betty Buzz ginger beer
  • fresh or frozen cranberries, for garnish

Muddle cranberry sauce, mint, lime and gingerroot in a 1-cup glass measuring cup. Remove and discard ginger.
Stir in coconut rum. Pour into 1 (10-oz.) ice-filled cocktail glass. Top with ginger beer. Garnish with cranberries, a lime slice and mint, if desired.
