- Hy-Vee vegetable oil, for frying
- 1 cup Hy-Vee buttermilk complete pancake & waffle mix
- ⅔ cup water
- 1 (1.3-lb.) pkg. Hy-Vee Short Cuts pineapple chunks
- 3 tbsp maraschino cherry juice
- 1 tbsp Hy-Vee corn starch
- Hy-Vee powdered sugar, for sprinkling
- Hy-Vee maraschino cherries, for garnish
Heat oil in deep-fat fryer or heavy 6-quart saucepan to 350°. Combine pancake mix and water in medium bowl.
Thread pineapple on wooden skewer; dip pineapple chunks into pancake batter, turning to coat completely. Fry skewers in batches 1 to 2 minutes per side. Remove from oil, let cool.
Mix together cherry juice and corn starch in small saucepan. Cook over medium-low heat, whisking continuously until thick enough to coat the back of a spoon.
Sprinkled fried pineapple with powdered sugar and drizzle with cherry sauce. Garnish with maraschino cherries, if desired.
