Everything Bagel Ramen with Poached Egg

  • 1 ¼ cups water
  • 1 ½ tsp Culinary Tours New York Style everything bagel seasoning, divided
  • 1 (3-oz.) pkg. chicken flavor ramen noodle soup
  • ⅓ cup frozen shelled edamame
  • ½ tsp chicken flavor ramen noodle soup seasoning packet
  • 1 Hy-Vee large egg

Bring water and 1 teaspoon everything bagel seasoning to a boil in a small saucepan. Set aside seasoning packet from ramen soup.
Add ramen noodles and edamame to boiling water mixture. Cook 2 minutes, stirring frequently with a fork to separate noodles. Stir in ramen seasoning packet. Reserve remaining seasoning packet for another use.
Crack egg into center of noodle mixture in saucepan; cover egg with some of the noodles and cook over low heat 3 minutes or until egg white is set and yolk begins to thicken.
Transfer mixture to serving bowl. Sprinkle with remaining ½ teaspoon everything bagel seasoning.
