Lemon Ginger Kombucha Mule

  • 1 (3-inch) piece fresh gingerroot, sliced; plus additional for garnish
  • 2 oz hot water
  • 2 oz fresh lemon juice
  • ¼ cup honey
  • 2 (16-oz. each) bottles Hy-Vee ginger kombucha
  • 8 oz lemon-flavored vodka
  • Lemon, sliced; for garnish
  • Fresh rosemary, for garnish

Combine ginger, hot water, lemon juice, and honey in a small saucepan; bring to a simmer over low heat. Simmer, uncovered, 10 minutes or until slightly thickened. Remove from heat; cool completely. Strain mixture through a fine-mesh sieve set over a 2-quart pitcher; cool to room temperature.
Stir in 1 bottle of ginger kombucha an 8-oz. lemon vodka. Pour into 6 (10-oz.) ice-filled wine glasses and top drinks with an additional bottle ginger kombucha. Garnish with additional gingerroot slices, lemon slices, and rosemary, if desired.
