- 1 ¼ cups Hy-Vee Short Cuts watermelon
- ½ cup baby spinach, tightly packed
- ½ medium English cucumber, chopped
- ½ cup Hy-Vee unsweetened coconut water
- 2 tbsp fresh mint, chopped
- Cucumber ribbon, for garnish
Place watermelon, tightly packed baby spinach, cucumber, coconut water, and fresh mint in a blender. Cover and blend until smooth.
Strain mixture through a fine-mesh sieve before serving. Garnish with a cucumber ribbon skewered on a cocktail pick, if desired.
