Ingredients

  • 1 (1½-lbs.) bag Hy-Vee Smart Bite baby blonde potatoes, (about 14)
  • 84 mini pepperoni slices, divided
  • 2 tbsp plus 1 tsp. Hy-Vee marinara pasta sauce, divided
  • 28 Soiree fresh mozzarella cheese pearls, divided
  • 1 tbsp Soiree grated Parmesan cheese, divided
  • 1 tsp Hy-Vee Italian seasoning
  • Fresh basil, for garnish

Preparation

Place oven racks 4-inches from broiler. Preheat broiler to HIGH. Line a large rimmed baking pan with foil; set aside.

Microwave potatoes in bag on HIGH for 6 minutes. Open bag; cool slightly. Cut potatoes in half lengthwise. Using a melon baller, scoop out center of each potato to make ½-inch-thick shell. Reserve for another use. Place potato halves, cut sides up, on a large rimmed foil-lined baking pan.

Fill each potato half with 3 mini pepperoni slices, ¼ teaspoon marinara sauce, and 1 fresh mozzarella pearl. Sprinkle with ½ tablespoon Parmesan cheese and Italian seasoning.

Broil 6 to 8 minutes or until cheese is melted and potatoes are tender. Sprinkle potatoes with additional ½ tablespoon grated Parmesan cheese. Garnish with fresh basil, if desired.
