Ingredients

  • ½ cup white balsamic vinegar
  • 2 tbsp Hy-Vee honey
  • 1 shallot, thinly sliced
  • ¼ cup fresh mint leaves, plus additional for garnish
  • ½ small cantaloupe, seeded, peeled, and sliced
  • 2 cups Hy-Vee Short Cuts watermelon
  • 5 mini cucumbers, cut into ribbons
  • 1 (8-oz.) pkg. Soirée traditional feta chunk cheese, cubed
  • Pink peppercorns, or black; crushed, for garnish

Preparation

Whisk together vinegar and honey in small bowl until combined. Add shallot and ¼ cup mint; gently stir to combine. Let stand 5 minutes.

Combine cantaloupe, watermelon, cucumber, ribbons, and feta on a large platter. Remove shallot from dressing; arrange shallot slices on top. Drizzle with dressing. Garnish with peppercorns and additional mint, if desired.
