Preparation

1
Preheat oven to 375°. Line a large rimmed baking pan with foil; spray with nonstick spray; set aside.
2
Pat tilapia dry with paper towels. Sprinkle with lemon & herb seasoning; set aside. Place flour into a shallow bowl. Whisk egg and milk in another shallow bowl. Stir together bread crumbs, 1 tbsp. lemon zest and 1 tbsp. dill in a third shallow bowl.
3
Dip fish, one piece at a time, into flour mixture to coat; shake off excess. Then dip into egg mixture; coat with panko mixture, gently pressing to adhere.
4
Place coated fish pieces 1 in. apart in prepared baking pan. Generously spray with nonstick spray. Bake for 15 to 20 minutes or until fish reaches 145° and is golden and crisp, turning occasionally and spraying with nonstick spray. Season to taste with sea salt.
5
Stir together tartar sauce, remaining 1 tbsp. lemon zest, remaining 1 tbsp. dill and and onion and herb seasoning in a small bowl.
6
To serve, season fish bites to taste with sea salt and garnish with additional dill, if desired. Serve with sauce for dipping.
