- 6 medium red beets and/or gold beets, trimmed
- 2 tbsp Gustare Vita olive oil
- ¼ cup fresh arugula, for serving
- Hy-Vee chopped pecans, toasted; for serving
Preheat oven to 400°. Line large rimmed baking pan with foil. Spray with nonstick spray; set aside.
Rub beets with olive oil. Place on prepared baking pan. Roast for 45 to 55 minutes or until tender. Cool for 15 minutes.
Peel beets and cut into ¼-inch-thick slices. Arrange on serving platter with fresh arugula. Sprinkle with chopped pecans, if desired.
