- 2 large sweet potatoes
- 2 tbsp Gustare Vita olive oil
- ¼ tsp Hy-Vee salt
- ¼ tsp Hy-Vee ground black pepper
- ¼ cup Hy-Vee plain Greek yogurt, for serving
- fresh dill, for garnish
Preheat oven to 400°. Line large rimmed baking pan with foil. Spray with nonstick spray; set aside.
Cut sweet potatoes into ½-inch thick slices, then cut crosswise in half. Toss sweet potatoes with olive oil, salt, and pepper in medium bowl until evenly coated. Place on prepared baking pan.
Roast for 25 to 30 minutes or until tender. Garnish with yogurt and dill, if desired.
