Sweet & Spicy Nut Medley

Sweet Spicy Nut Medley


  • ½ cup Hy-Vee butter, melted
  • 4 tsp Hy-Vee salt
  • 4 tsp Hy-Vee chili powder
  • leaves from 8 sprigs fresh thyme, plus additional as needed
  • 4 tbsp Hy-Vee brown sugar
  • 4 tsp Hy-Vee cinnamon
  • 4 cups mixed nuts (almonds, cashews, pecans)

Preheat oven to 325°. Line baking pan with aluminum foil and lightly coat with nonstick cooking spray; set aside.
In a small bowl, combine butter, salt, chili powder, thyme, brown sugar and cinnamon. Stir in nuts, mixing gently until well coated. Spread nuts evenly on baking pan. Bake for 18 minutes, stirring twice.
While nuts cook, line a second baking sheet with paper towels. Remove nuts from oven and transfer to paper towel to cool. Remove excess liquid by patting nuts with additional paper towel. If desired, season with additional fresh thyme. Serve at room temperature.
