Ingredients

  • 2 tbsp Hy-Vee honey
  • 1 tbsp Hy-Vee vegetable oil
  • ½ tsp lime zest
  • 1 tbsp fresh lime juice
  • ¼ tsp gingerroot, grated
  • ¼ tsp imitation coconut flavoring
  • 1 (20-oz.) container Hy-Vee Short Cuts watermelon, cut into 1-inch cubes
  • 1 (16-oz.) container Hy-Vee Short Cuts triple berry blend
  • Full Circle Market organic unsweetened coconut flakes, for garnish
  • Hy-Vee party peanuts, coarsely chopped, for garnish
  • Fresh mint, for garnish

Preparation

For dressing, whist together honey, oil, lime zest and juice, gingerroot, and coconut flavoring until combined.

For salad, combine watermelon and berries in medium bowl. Drizzle with dressing; gently toss to coat. Transfer to serving plates. Garnish with coconut flakes, peanuts, and mint. Serve immediately.
